But today i finaly got it throught!! And i coulnd't be happier. Lavash Crackers and Dips to go with it, and ohh... vegan/gluten free. When i saw this mounth challenge i have to say i got exited, dips vegan/gluten free, but, but, but... cheese makes a excelent dip!!! What would i make? So, 'cause of timing i ended up making the lavash non gluten free (didn't have the proper flour and agave syrup) with a sweet and a savory topping (sugar and sugar with cinnamon and sesame seeds) and for the dips a apple puré, of course with rhun and a tomato dip.<br />I just loved it was read for lunch time, very easy, nice to make and distressfull!!!<br />Thank you so much <a href="http://glutenagogo.blogspot.com/">Natalie</a> and Shel for bringing this lovely lovely recipe.<br />The recipe i post here as it is and check out the creations of my fellow bakers at our<a href="http://daringbakersblogroll.blogspot.com/"> blogroll</a>.<br /><br /><br />Makes 1 sheet pan of crackers<br /><br />* 1 1/2 cups (6.75 oz) unbleached bread flour or gluten free flour blend (If you use a blend without xanthan gum, add 1 tsp xanthan or guar gum to the recipe)<br />* 1/2 tsp (.13 oz) salt<br />* 1/2 tsp (.055 oz) instant yeast<br />* 1 Tb (.75 oz) agave syrup or sugar<br />* 1 Tb (.5 oz) vegetable oil<br />* 1/3 to 1/2 cup + 2 Tb (3 to 4 oz) water, at room temperature<br />* Poppy seeds, sesame seeds, paprika, cumin seeds, caraway seeds, or kosher salt for toppings<br /><br />1. In a mixing bowl, stir together the flour, salt yeast, agave, oil, and just enough water to bring everything together into a ball. You may not need the full 1/2 cup + 2 Tb of water, but be prepared to use it all if needed.<br /><br />2. For Non Gluten Free Cracker Dough: Sprinkle some flour on the counter and transfer the dough to the counter. Knead for about 10 minutes, or until the ingredients are evenly distributed. Lightly oil a bowl and transfer the dough to the bowl, rolling it around to coat it with oil. Cover the bowl with plastic wrap.<br /><br />or<br /><br />2. For Gluten Free Cracker Dough: The dough should be firmer than French bread dough, but not quite as firm as bagel dough (what I call medium-firm dough), and slightly tacky. Lightly oil a bowl and transfer the dough to the bowl, rolling it around to coat it with oil. Cover the bowl with plastic wrap.<br /><br />3. Ferment at room temperature for 90 minutes, or until the dough doubles in size. (You can also retard the dough overnight in the refrigerator immediately after kneading or mixing).<br /><br />4. For Non Gluten Free Cracker Dough: Mist the counter lightly with spray oil and transfer the dough to the counter. Press the dough into a square with your hand and dust the top of the dough lightly with flour. Roll it out with a rolling pin into a paper thin sheet about 15 inches by 12 inches. You may have to stop from time to time so that the gluten can relax. At these times, lift the dough from the counter and wave it a little, and then lay it back down. Cover it with a towel or plastic wrap while it relaxes. When it is the desired thinness, let the dough relax for 5 minutes. Line a sheet pan with baking parchment. Carefully lift the sheet of dough and lay it on the parchment. If it overlaps the edge of the pan, snip off the excess with scissors.<br /><br />or<br /><br />4. For Gluten Free Cracker Dough: Lay out two sheets of parchment paper. Divide the cracker dough in half and then sandwich the dough between the two sheets of parchment. Roll out the dough until it is a paper thin sheet about 15 inches by 12 inches. Slowly peel away the top layer of parchment paper. Then set the bottom layer of parchment paper with the cracker dough on it onto a baking sheet.<br /><br />5. Preheat the oven to 350 degrees Fahrenheit with the oven rack on the middle shelf. Mist the top of the dough with water and sprinkle a covering of seeds or spices on the dough (such as alternating rows of poppy seeds, sesame seeds, paprika, cumin seeds, caraway seeds, kosher or pretzel salt, etc.) Be careful with spices and salt - a little goes a long way. If you want to precut the cracker, use a pizza cutter (rolling blade) and cut diamonds or rectangles in the dough. You do not need to separate the pieces, as they will snap apart after baking. If you want to make shards, bake the sheet of dough without cutting it first.<br /><br />5. Bake for 15 to 20 minutes, or until the crackers begin to brown evenly across the top (the time will depend on how thinly and evenly you rolled the dough).<br /><br />6. When the crackers are baked, remove the pan from the oven and let them cool in the pan for about 10 minutes. As you can see we made French Bread, but not just a french bread, it was Julia Child French Bread. When i firt saw what we would be making this mounth i just couldn't be happier. Lemon Meringue Pie it's a dessert we've been eating in my family since way before i was born and just the thought of try out a new recipe was indeed a challenge. The recipe we are used to make have a filling using condesed milk and this one was very diferent... so i kept wondering if it would be aproved by people here.<br />I started making the pie and well, my mom got all over the kitchen to know how was it doing and to give out her opnions. Firts was the crust when i remove it from the oven the smell was fabulous, and as a good daughter that i am i separeted i piece of the crust for her to try before the intere pie was ready. Well, did she liked? Oh yes.. she loved!! So.. i've got really exiceted and went for the filling, after mixing the cornstrach and sugar with the water my father (yes... he decided to participate on this too) sad "wow, this looks like what my mom did to me when i was i kid and was sick" and of course i had to ask "and did you liked it?" and for my surprise the answer was "oh, yes.. a lot", so all this talk lift me up even more to the recipe, if the base is good the chance of the role thing be good are good. And.. after ending my mom came with a spoon and said "can i try?", in again she liked a lot!! So, so far a succes! And for the meringue, well i was alone so nothing intersting to tell. Sprinkle with water, let rest 30 seconds and then either process very briefly or cut in with about 15 strokes of the pastry cutter, just until the dough begins to stick together and come away from the sides of the bowl. Turn onto a lightly floured work surface and press together to form a disk. I almost tought about not participating on the challenge, but last weekend i managed to find some hours to do it.<br /><br />Tough would be very dificult and hard working but after a few hours i had it all done. It was so simple... just to make a dish and take it to the party...<br />I got thinking on what to do... In a blender beet the carrots, the eggs and the canola oil until its creamy.<br />In a bolw sift the flour sugar and baking powder and add the carrots, eggs and oil. But there's something i've made and would love to share with you is this....<br />For a school project i'm developing a recipe tha goes green tea and dark chocolate. Here in Brazil we're not really used to have dark chocolate, and its kind hard to find also, bute recently Nestle put to sale a 70% cocooa chocolate and of course i just had to buy it... And to finishi add the chocolate.<br />Bake until it gets strong green. So what to do with all of that??<br />I started looking for recepies, but nothing seemed to please me, i wanted something tasty and easy... when I suddenly found Banana Chocolate Chips Muffins. It was just perfect because bananas i had and i also had chocolate chips!!<br />And just to please a litle my mom i mad chocolate ganache, because i had chocolate and heavy cream that was alredy doom to the trash can.<br />The recipe is from <a href="http://www.epicurious.com/recipes/food/views/101020">Epicurus</a> but i'll post it here whit some notes on the ingredients.<br /><br />Banana Chocolate Chips Muffins<br /><br />Ingredients<br />1 1/2 cups all purpose flour<br />2/3 cup sugar<br />1 1/2 teaspoons baking powder<br />1/4 teaspoon salt<br />1 cup mashed ripe bananas<br />1 large egg<br />115g (1 stick) unsalted butter, melted<br />1/4 cup milk - i used nonfat milk (didn't have the whole one)<br />3/4 cup semisweet chocolate chips<br /><br />Preparation<br />Preheat oven to 350°F. Line twelve 1/3-cup muffin cups with foil muffin liners. Mix flour, sugar, baking powder and salt in large bowl. Mix mashed bananas, egg, melted butter and milk in medium bowl. Stir banana mixture into dry ingredients just until blended (do not overmix). Stir in chocolate chips.<p> Divide batter among prepared muffin cups, filling each about 3/4 full. Bake muffins until tops are pale golden and tester inserted into center comes out with some melted chocolate attached but no crumbs, about 32 minutes. This time was the one that it tasted better... but didin't look very preety... I'll keep on trying, so for now i'll post this one...<br /><br />I'm no going to post the recipe because I used <a href="http://tartelette.blogspot.com/2007/06/pink-tagada-macarons.html">this one here</a>.
